Random Recipes #24: Someone else’s book

randomrecipes2

Before my good friend / work colleague went on maternity leave, we used to regularly meet up for “come dine with me” type of evenings. We were about 3 or 4 girls and we would meet up for dinner and would each bring a dish. As we are all foreign, it was really interesting to eat dishes from all over Europe.

Another thing we did was exchanging cook books. Before going to dinner, we would select some books that may interest the other girls and we would borrow them for a little while.

My friend chose the book Muffins & Bakes for me. It is a very good book, full of delicious recipes. It is one of the rare books I could eat nearly all recipes.

A recipe I particularly like from this book is the Apple streusel cupcakes.

Streusel2

I found the recipe a bit odd but it worked perfectly. This is definitely a keeper recipe.

I told my my how much I liked the book and asked if I could keep it for a little while. Guess what she said? She said I could keep it if I  wanted as she’s not really into muffins, cupcakes and all that. How nice is she?

Despite this book not being my friend’s anymore but mine, I’m submitting this recipe to the Random Recipe Challenge hosted by Dom at Belleau Kitchen
