Classic French: Soufflé

A few weeks ago, I discovered the Classic French challenge. Being French, I thought it was ridiculous of me not taking part. I was all happy about it until I found out the theme for this month: a dreaded Soufflé.

I looked into my French cookbooks and after reading a few recipes, i thought it couldn't be that bad. I then called my Mum and asked if she’d ever made a soufflé. Her answer: Oh no, it’s too difficult to make. Oh dear!

Never mind, I decided to make a Ham & Cheese soufflé or “ Soufflé jambon fromage”. I followed the recipe from this fantastic book: 2000 recettes de la cuisine Française.

The recipe was actually very easy to follow. You basically just make a Béchamel, add a yolk, your toppings ; beat the egg whites and mix all together.

Once your little pots are ready, you put them in the oven and you pray!

They actually cam out of the oven well, soufflés but by the time I was done taking pictures, they’d came down a bit.

I served them with a simple side salad and it was very nice.

Now, I'd never had soufflés before so I wasn't sure what they were supposed to look like or even taste like.

The most important was that they tasted very good and that my Mum was impressed :)
