AlphaBakes January: “D”

I haven't baked in a very long time. Since October to be more precise. My last bake was for AlphaBakes October. That's a very very long time. Not sure what happened to be honest.
Anyway, I’m now back with another bake, which I picked in a book I got from Christmas: Making cupcakes with Lola. I’ve wanted this book for a long time and finally got it. I’m really happy as it contains tons of delicious recipes.
So for this month’s challenge, I made some Dark chocolate truffle cupcakes.
As usual, as they’re only for Boyfriend and I, I halved the recipe and it made 6 perfect cakes. Usually I run out of dough for the last cake.
The recipe was fairly easy. It just took a bit of time as we have to let the chocolate cool down a bit. Also, they say to cool down the ganache in the fridge for 30-40 mins. I think this is a bit too long. I took my ganache out of the fridge after 20 mins and it was too hard to work with.
I used the truffles we got for Christmas from my parents. They are delicious and are from a French Chocolatier: Alex Olivier.
I served these cupcakes to Boyfriend and his Dad on Sunday afternoon and Boyfriend told me it is one of the best cupcake I’ve made ; very moist, very chocolatey.

I’ve also packed one of them for my friend Avare as she’s back at work this week. We always try each other’s cakes and give each other advice on how to improve them.
