AlphaBakes October: “N”

This month letter is “N”. I don’t know you’ve felt about it but I struggled a bit. When thinking of N, the only thing coming to my mind was Nutella.
I LOVE Nutella but wanted do do something else. I looked at the indexes in my books but either couldn’t find anything I liked (I don’t like nuts) or there was simply nothing.
I then had a look at my French books. After all, if I cant find anything in English, I can use my French but same thing, not much choice.
I then simply thought about not taking in this month challenge but came across a recipe you may have recently seen on the blog: Edd Kimber’s Nanaimo bars. Yeah, that an “N”.

I halved the recipe and it still gave me 16 decent squares. I also took out the coconut and nuts from the bottom layer and they were still perfect.
It took me quite a long time to make this as you need to let it chill between each layer but it was worth it.
The only problem I had was that the top layer didn’t properly set. I knew it wasn’t going to be rock hard but it was actually quite soft.
I even had to put them in the fridge at work as it was so hot that it was properly melting and the ganache was separating from the middle layer.
Them melting was actually a good excuse for my work colleagues to eat them more quickly.
Everyone loved them and they are now Boyfriend’s favourite.
